Teak and holly prefinished

I am in the process of refinishing the cabin sole in my Ericson 30+. I have made the templates for the new cabin sole (the old floor was destroyed during removal as it was glued).
When I purchased the boat she came with the teak and holly material. Replacing it was "on the list" but never done. It has a finish of some sort on it. Is this a sealer? Is this common?
I am planning on using Ultimate Sole to finish the teak and holly and am not sure if I should apply over this finish or if I need to strip it off.

Why not try the Ultimate Sole on a small area outside the template and see how it performs?
